Many of the staff at the Cantonese Cafe I frequent in the Quincy area of Boston Massachusetts can understand English, Mandarin, Cantonese, Toisanese and Hokkien.  Most of the staff prefer you order your food in Cantonese.  Chicken in Cantonese is "Guy", so chicken meals are "Guy Juk door di Chung", "Guy cee Lo Main", "Guy cee Tchao Faan", etc.
